I’m rocking back and forth in a straightjacket in a padded cell and am hallucinating all this.
I’m in the matrix/a brain in a jar somewhere, stimulated to make me perceieve this as reality.
I’m just one subroutine of an immense world-simulating computer program.
A wicked demon is tricking me.
God is tricking me (he created me, his only creation, for his entertainment).
The universe coalesced out of swirling gas a microsecond ago, forming me and my fake memories entirely by accident.

Some people seem confused. Google Descartes for the basic idea, and what I’m asking is if anyone else has any weird theories (hypotheses) that COULD BE TRUE, and are impossible to disprove.
I don’t have any others, but I want to underline what you’ve got. In each of the instances you mention, you’ve still got an “I” capable of the cogito, and you’ve got an Other distinct from the “I”. Philosophically speaking, that’s quite a lot to build on.
